Almonds are immensely popular among the dry fruit category and are well known for their excellent taste, texture and nutritive benefits. The shelled almonds (without the shell) coming from US are graded into US Fancy, US Extra No. 1, US No. 1, US Select Sheller Run, US Standard Sheller Run, US No.1, and US No. 1 pieces.
Each of these grades starting from the US fancy describe their physical characteristics such as whole, clean and well-dried. Further, the grading also depends on level of decay, rancidity, insect injury, foreign material, whole or split, presence of dust, mold, and gum among other things. The US Fancy is the category of shelled almonds that are free of all these foreign materials mentioned above.
In-shell almonds are almost similarly graded but with a slight difference. They are classified as US No. 1, US No. 1 Mixed, US No. 2, and US No. 2 mixed. They are all graded on varietal characteristics, absence of any loose or foreign material, clean, of uniform color, no decay, rancidity, not damaged by mold, insects, gum without any kind of discoloration. Additionally, there is tolerance that is built into different grades.
Nevertheless, all varieties of almonds need to be free of foreign material, not contain mold, or gum.
